- 2 duck, cut in pieces
- 1 lb. pure pork smoked homemade sausage
- 4 Tbsp. olive oil
- 2 Tbsp. butter
- 3 medium onions, chopped
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 3 sprigs parsley, chopped
- 2 cans Ro-Tel tomatoes
- 6 c. chicken stock
- 1 tsp. thyme
- 2 c. raw rice
- 2 bay leaves
- 1 1/2 bell peppers, chopped
- 1 stalk celery
- 4 stalks green onions, chopped
- salt, pepper and red pepper
- 1 tsp. basil
Method
- Brown duck and sausages in melted butter and olive oil.
- Add onions, bell peppers and garlic.
- Saute for 2 minutes, stirring continuously.
- Add all ingredients, except rice and simmer for 45 minutes, stirring often.
- Check duck for tenderness.
- Add rice and more chicken stock, if necessary.
- Cover and place in lowest heat level and cook for 15 minutes or until rice is nice and fluffy.
