Ingredients

  • 2 duck, cut in pieces
  • 1 lb. pure pork smoked homemade sausage
  • 4 Tbsp. olive oil
  • 2 Tbsp. butter
  • 3 medium onions, chopped
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 3 sprigs parsley, chopped
  • 2 cans Ro-Tel tomatoes
  • 6 c. chicken stock
  • 1 tsp. thyme
  • 2 c. raw rice
  • 2 bay leaves
  • 1 1/2 bell peppers, chopped
  • 1 stalk celery
  • 4 stalks green onions, chopped
  • salt, pepper and red pepper
  • 1 tsp. basil

Method

  • Brown duck and sausages in melted butter and olive oil.
  • Add onions, bell peppers and garlic.
  • Saute for 2 minutes, stirring continuously.
  • Add all ingredients, except rice and simmer for 45 minutes, stirring often.
  • Check duck for tenderness.
  • Add rice and more chicken stock, if necessary.
  • Cover and place in lowest heat level and cook for 15 minutes or until rice is nice and fluffy.
