- 3 cups sliced mushrooms
- 1.5 yellow onion
- 2 cloves garlic, minced
- 2 tablespoons Unsalted Butter
- 1/2 cup Dry White Wine
- 1/4 cup Heavy Cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon fresh ground coriander
Method
- Slowly melt butter in sauce pan, add onion and cook until translucent, add garlic.
- Add mushrooms and cook until they release liquid.
- Season with salt, pepper, red pepper flake, and coriander.
- Add white wine and reduce by half, and heavy cream, check seasoning.
- add chopped parsley
