Ingredients

  • 1/2 cup brown sugar
  • 2 tsp ground cardamom
  • 1/3 cup golden syrup
  • 1 tsp baking soda
  • 2 tsp boiling water
  • 1/3 cup flour, sifted
  • 4 oz white chocolate, finely chopped
  • 4 oz macadamia nuts, chopped, plus 2 tbsp extra, chopped
  • 9 tbsp butter, chopped, at room temperature

Method

  • Preheat oven to 350°F. Lightly grease and line 3 baking sheets with parchment paper. For the dough, cream butter, sugar and cardamom together with an electric mixer until light and fluffy. Add corn syrup and molasses and beat until combined. In a small bowl, dissolve baking soda in 2 tsp boiling water. Stir into butter mixture along with flour. Fold in chocolate and nuts until combined.
  • Roll tbsps of the dough into balls. Arrange on prepared baking sheets, 1 inch apart. Flatten slightly. Sprinkle with extra macadamia nuts. Bake 10-15 mins, until golden and firm. Cool on baking sheets 5 mins before transferring to a wire rack to cool completely. Serve.
