Ingredients

  • 24 each whole eggs
  • 36 each egg yolks
  • 1-1/2 gal. whipping cream
  • 1-1/2 qt. low-fat milk
  • 1-1/2 qt. sugar
  • 2 quarts white chocolate, chopped
  • 24 each French bread, cut into 1/2-inch-thick slices

Method

  • Beat eggs and egg yolks with wire whisk until well blended; set aside.
  • Mix whipping cream, milk and sugar in large saucepan.
  • Cook on low heat until just simmering.
  • Add white chocolate; stir until chocolate is completely melted.
  • Remove from heat.
  • Gradually beat in egg mixture with wire whisk.
  • Arrange bread slices in 2 layers in bottoms of 6 half hotel pans (1 half hotel pan for trial).
  • Pour 8 cups of the chocolate mixture into each pan; cover with aluminum foil.
  • Let stand 30 min.
  • to allow bread to soak up chocolate mixture.
  • Bake, covered, in 300F-standard oven 1 hour.
  • Uncover; bake an additional 45 min.
  • or until top is golden brown.
  • Cool.
  • Refrigerate 8 hours or overnight.
  • Cut each pan into 9 (3x4-inch) pieces.
  • Serve warm by microwaving each individual piece on microwaveable plate on HIGH 20 to 30 sec.
