Ingredients

  • 3 1/2 strips bacon, chopped
  • 2 None spring onions, trimmed and sliced
  • 1/2 lb button mushrooms, sliced
  • 1 tbsp wholegrain mustard
  • 1 1/2 cups vegetable stock
  • 5 tbsp white wine vinegar
  • 1 lb small red potatoes, cooked then thinly sliced

Method

  • Heat a frying pan and add the bacon. Cook for 4-5 mins then add the spring onions and mushrooms. Saute for 3-4 mins. Stir in the mustard and stock and simmer for 1-2 mins. Add the vinegar and season. Toss with the potatoes and serve.
