- 1/4 cup garlic olive oil
- 2 tbsp white balsamic vinegar
- 1 tsp minced garlic
- 1 None lemon, zested and juiced
- 2 None zucchini, sliced
- 2 None yellow squash, sliced
- 3 None bell peppers, sliced
- 1/2 lb asparagus
- 1 None large red onion, cut into wedges
Method
- Preheat grill. Whisk together olive oil, vinegar, garlic, 1/2 tsp lemon zest, and 1 tbsp lemon juice. Season. Add vegetables and toss to coat. Grill for 1-2 mins per side, or until tender. Arrange on a serving platter.
