Ingredients

  • 450g butternut pumpkin, peeled, cut into cubes
  • olive oil spray
  • 2 cups penne pasta, cooked and drained
  • 1/2 BBQ chicken, cut into strips
  • 2/3 cup roasted capsicum, cut into strips
  • 4 spring onions, diagonally sliced
  • 1/3 cup KRAFT Classic Mayonnaise
  • 3/4 cup walnuts, roughly chopped
  • 1/3 cup milk
  • 2 tablespoons sour cream

Method

  • Spray the pumpkin pieces with olive oil and bake in a hot oven 200C for 25-30 minutes or until tender.
  • Toss through the warm pasta with the chicken, capsicum and spring onions.
  • Combine mayonnaise, sour cream and milk, stir through 1/2 cup of the walnuts then toss through the salad ingredients.
  • Sprinkle with the remaining walnuts and serve immediately.
