- 1 lb. fresh mushrooms, sliced
- 1 onion, sliced
- 2 zucchini or yellow squash, sliced
- 1 green pepper, sliced
- 3 to 4 Tbsp. butter
- 1 tsp. salt
- 1/4 tsp. pepper
- dash garlic salt
- 1 tomato, sliced
- 1 c. mayonnaise
- 1 c. Mozzarella cheese, grated
Method
- Prebake 10 inch pie shell.
- Saute vegetables in butter until crisp but not soft.
- Drain well and add seasonings.
- Place tomato slices in bottom of prebaked pie shell.
- Add vegetables.
- Spread mayonnaise and cheese mixture over vegetables.
- Bake uncovered at 325° for 45 minutes to 1 hour.
