Ingredients
- 1 head cauliflower
- 1/3 cup chicken broth warmed
- 2 tablespoons reduced-fat sour cream
Method
- Place the cauliflower florets in a microwave-safe bowl with 1/4 cup water, cover with plastic wrap and microwave for 3 to 5 minutes, or until completely tender.
- Place the cooked cauliflower in a food processor. Add chicken broth, sour cream, salt and pepper; puree until smooth.
- Salt and pepper as needed. Serve garnished with sliced chives.
