Ingredients

  • 1 large bag frozen mixed vegetables
  • 1 can corn, drained or 2 pkg.
  • 1 (10 oz.) frozen corn
  • 1 c. chopped celery
  • 1 medium onion, chopped
  • 2 c. shredded Cheddar or Swiss cheese
  • 1 1/4 c. mayonnaise
  • 1 tube Ritz crackers, crushed
  • 1 stick oleo, melted
  • salt and pepper to taste

Method

  • Mix vegetables, celery, onion and cheese together.
  • Add mayonnaise and mix until vegetables are covered.
  • Place in baking dish.
  • Top with cracker crumbs which have been tossed in butter. Bake, uncovered, for 30 to 45 minutes in 350° oven.
  • Serves 15.
