Ingredients
- 1 c. celery, diced and sauteed until tender
- 2 Tbsp. margarine
- 3 c. rice (hot cooked)
- 2 c. shrimp (can also use crab, tuna, chicken or combo)
- 3 hard-boiled eggs, chopped
- 3 Tbsp. lemon juice
- 1/2 c. mayonnaise
- 1/2 can cream of celery soup (1 c.)
- 1 (3 oz.) can French fried onion rings (can substitute sauteed bread crumbs in margarine until brown)
Method
- Mix rice, celery, meat, eggs and lemon juice. Fold in mayonnaise and soup.
- Place in greased casserole dish. Top with onion rings or bread crumbs or add last 10 minutes as they tend to get too brown on top. Bake at 350° for 25 or 30 minutes until bubbling hot. Serves 6.
