Ingredients

  • 1 c. celery, diced and sauteed until tender
  • 2 Tbsp. margarine
  • 3 c. rice (hot cooked)
  • 2 c. shrimp (can also use crab, tuna, chicken or combo)
  • 3 hard-boiled eggs, chopped
  • 3 Tbsp. lemon juice
  • 1/2 c. mayonnaise
  • 1/2 can cream of celery soup (1 c.)
  • 1 (3 oz.) can French fried onion rings (can substitute sauteed bread crumbs in margarine until brown)

Method

  • Mix rice, celery, meat, eggs and lemon juice. Fold in mayonnaise and soup.
  • Place in greased casserole dish. Top with onion rings or bread crumbs or add last 10 minutes as they tend to get too brown on top. Bake at 350° for 25 or 30 minutes until bubbling hot. Serves 6.
