Ingredients

  • 2/3 c. sugar
  • 1/3 c. self-rising flour
  • 1/4 tsp. salt
  • 2 c. milk
  • 3 egg yolks
  • 2 Tbsp. butter
  • 2 1/2 c. coconut (reserve 1/2 c. for topping)
  • 1 tsp. coconut flavoring
  • 3 egg whites plus 1/2 tsp. coconut flavoring
  • 1 (9-inch) pie crust, cooked
  • 6 Tbsp. sugar (for topping)

Method

  • Mix
  • all dry ingredients, except coconut.
  • Melt butter. Add egg yolks, butter and milk slowly to dry ingredients; cook until thick,
  • stirring constantly. When thick, add coconut (2 cups), mixing well.
  • Pour into cooked 9-inch pie shell.
