Ingredients
- 2/3 c. sugar
- 1/3 c. self-rising flour
- 1/4 tsp. salt
- 2 c. milk
- 3 egg yolks
- 2 Tbsp. butter
- 2 1/2 c. coconut (reserve 1/2 c. for topping)
- 1 tsp. coconut flavoring
- 3 egg whites plus 1/2 tsp. coconut flavoring
- 1 (9-inch) pie crust, cooked
- 6 Tbsp. sugar (for topping)
Method
- Mix
- all dry ingredients, except coconut.
- Melt butter. Add egg yolks, butter and milk slowly to dry ingredients; cook until thick,
- stirring constantly. When thick, add coconut (2 cups), mixing well.
- Pour into cooked 9-inch pie shell.
