- 1 tablespoon oil
- 1 onion
- 1 zucchini
- 1 green bell pepper or red
- 1 tomato
- 1 avocado
- 1 lime
- salt
- pepper
- 1 dash chili pepper powder
- cilantro for garnish
- flour tortillas
Method
- Wash and slice all vegetables.
- In frying pan, saute onion, zucchini, and bell pepper in oil for 2 minutes or until tender. Add salt & pepper, chili powder. In a large plate, place a sheet of tortilla. Place cooked veggies, 2 slices of tomato and avocado, a squeeze of lime juice on top of tortilla. Wrap it up, and garnish with a sprig of cilantro.
