Ingredients

  • 1 tablespoon oil
  • 1 onion
  • 1 zucchini
  • 1 green bell pepper or red
  • 1 tomato
  • 1 avocado
  • 1 lime
  • salt
  • pepper
  • 1 dash chili pepper powder
  • cilantro for garnish
  • flour tortillas

Method

  • Wash and slice all vegetables.
  • In frying pan, saute onion, zucchini, and bell pepper in oil for 2 minutes or until tender. Add salt & pepper, chili powder. In a large plate, place a sheet of tortilla. Place cooked veggies, 2 slices of tomato and avocado, a squeeze of lime juice on top of tortilla. Wrap it up, and garnish with a sprig of cilantro.
