Ingredients

  • 2 potatoes, peeled and chopped
  • 2 carrots, chopped
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 4 Tbsp. flour
  • 1 tsp. salt
  • 1 Tbsp. sage
  • 1/4 c. oil
  • 4 eggs

Method

  • Cook together potatoes, carrots, onion and celery in water to cover.
  • Leave enough broth (2 cups) for gravy.
  • Scramble eggs in oil.
  • Mix in flour, salt and sage.
  • Add broth from vegetables and mix well.
  • Combine with cooked vegetables.
  • Place in a casserole dish covering with pastry strips.
  • Spread with cream or milk.
  • Bake at 350° until done, about 30 minutes.
