Ingredients
- 2 potatoes, peeled and chopped
- 2 carrots, chopped
- 1 onion, chopped
- 2 stalks celery, chopped
- 4 Tbsp. flour
- 1 tsp. salt
- 1 Tbsp. sage
- 1/4 c. oil
- 4 eggs
Method
- Cook together potatoes, carrots, onion and celery in water to cover.
- Leave enough broth (2 cups) for gravy.
- Scramble eggs in oil.
- Mix in flour, salt and sage.
- Add broth from vegetables and mix well.
- Combine with cooked vegetables.
- Place in a casserole dish covering with pastry strips.
- Spread with cream or milk.
- Bake at 350° until done, about 30 minutes.
