- 1 14 cups oats
- 1 cup flour
- 1 teaspoon baking powder
- 1 12 teaspoons pumpkin spice
- 12 teaspoon baking soda
- 14 cup soymilk
- 14 cup egg substitute
- 1 cup canned pumpkin
- 34 cup brown sugar
- 12 teaspoon salt
- 1 teaspoon vanilla
- 1 tablespoon brown sugar
- 1 12 teaspoons cinnamon
Method
- Mix all ingredients except the last two and pour them into greased muffin tins.
- For each muffin, mix the 1 Tbsp brown sugar and the 1 1/2 tsp cinnamon and place them on top.
- Bake at 375 degrees for 25-30 minutes.
