Ingredients

  • 1/4 c. butter
  • 1 c. brown sugar
  • 1 can pineapple rings
  • maraschino cherries
  • nuts (optional)
  • 3 eggs, separated
  • 1 c. sugar
  • 5 Tbsp. pineapple juice
  • 1 c. flour
  • 1 tsp. baking powder

Method

  • Melt butter slightly in 10-inch skillet.
  • Spread sugar over butter, then place fruit and nuts, with a cherry in the center of each slice of pineapple, to form pleasing design.
  • Beat egg yolks. Add sugar, juice, flour and baking powder.
  • Fold in beaten egg whites.
  • Bake in 10-inch skillet for 20 to 25 minutes at 350°.
