Ingredients
- 1 pkg. yellow cake mix
- 2 1/3 c. Baker's coconut
- 1/2 c. firmly packed brown sugar
- 1 (16 oz.) can fruit cocktail
- 1/2 c. evaporated milk
- 2 eggs
- 1/2 c. butter or margarine
- 1/2 c. sugar
Method
- Combine cake mix, fruit cocktail with syrup, 1 cup coconut and eggs in large mixing bowl.
- Beat at medium speed for 2 minutes. Pour into greased 9 x 13-inch pan.
- Sprinkle with brown sugar (sprinkle brown sugar close to edge of pan because as cake rises the brown sugar moves to middle of cake).
- Bake at 325° for 45 minutes or until cake springs back when touched.
- Bring butter, sugar and milk to boil in small pan.
- Boil 2 minutes.
- Remove from heat.
- Stir in remaining coconut.
- Spoon over hot cake in pan. Serve warm or cold.
