Ingredients

  • 1 pkg. yellow cake mix
  • 2 1/3 c. Baker's coconut
  • 1/2 c. firmly packed brown sugar
  • 1 (16 oz.) can fruit cocktail
  • 1/2 c. evaporated milk
  • 2 eggs
  • 1/2 c. butter or margarine
  • 1/2 c. sugar

Method

  • Combine cake mix, fruit cocktail with syrup, 1 cup coconut and eggs in large mixing bowl.
  • Beat at medium speed for 2 minutes. Pour into greased 9 x 13-inch pan.
  • Sprinkle with brown sugar (sprinkle brown sugar close to edge of pan because as cake rises the brown sugar moves to middle of cake).
  • Bake at 325° for 45 minutes or until cake springs back when touched.
  • Bring butter, sugar and milk to boil in small pan.
  • Boil 2 minutes.
  • Remove from heat.
  • Stir in remaining coconut.
  • Spoon over hot cake in pan. Serve warm or cold.
