Ingredients

  • 3 cups chicken broth
  • 1 onion, minced (small)
  • 2 apples, peeled, cored and grated (medium)
  • 2 tablespoons honey
  • 2 cups pumpkin puree (canned)
  • 1 cup apple juice
  • 13 teaspoon pumpkin pie spice
  • 14 cup half-and-half

Method

  • In a Dutch oven casserole, simmer together first 3 ingredients until onion and apple are soft.
  • (This can be pureed in a food processor at this point, but it is not essential).
  • Stir in the remaining ingredients and heat through.
  • Serve with a teaspoon of low fat sour cream on top and a sprinkling of cinnamon.
