Ingredients

  • 1/3 c. margarine or butter
  • 3/4 c. chopped green pepper
  • 1/2 c. chopped onion
  • 1 can Green Giant cream-style corn
  • 1 can Green Giant whole kernel corn
  • 3 eggs, well beaten
  • 1 (8 1/2 oz.) pkg. corn muffin mix
  • 1 c. shredded Cheddar cheese

Method

  • Heat oven to 350°.
  • Grease a 2-quart casserole dish.
  • In a small skillet, melt margarine.
  • Add green peppers and onions. Save until crisp-tender.
  • In a large bowl, combine cream-style corn, whole kernel corn, eggs and corn muffin mix; blend well. Add onion mixture, mix well and pour into casserole dish. Sprinkle with Cheddar cheese.
  • Bake at 350° for 55 to 60 minutes or until firm and set.
  • Let stand 5 minutes before serving, approximately 12 cup serving.
