Ingredients

  • 1 potato per person
  • olive oil
  • 1 clove garlic per potato
  • salt

Method

  • Slice the potatoes thinly.
  • Add olive oil (1/8 cup) to a heated nonstick frying pan.
  • Add crushed garlic to pan along with the potatoes.
  • Make sure the oil in the pan is adequate to coat the potatoes.
  • Fry the potatoes until lightly browned on both sides.
  • After lightly browned, remove the potatoes from the pan and let them cool completely.
  • After cool, reheat pan; add additional oil (1/8 cup) and cook the potatoes again on both sides until nicely browned and tender.
  • Salt to taste and serve.
