Ingredients
- 1 potato per person
- olive oil
- 1 clove garlic per potato
- salt
Method
- Slice the potatoes thinly.
- Add olive oil (1/8 cup) to a heated nonstick frying pan.
- Add crushed garlic to pan along with the potatoes.
- Make sure the oil in the pan is adequate to coat the potatoes.
- Fry the potatoes until lightly browned on both sides.
- After lightly browned, remove the potatoes from the pan and let them cool completely.
- After cool, reheat pan; add additional oil (1/8 cup) and cook the potatoes again on both sides until nicely browned and tender.
- Salt to taste and serve.
