Ingredients

  • onion 1 sm.
  • 1/4 cup chopped parsley coarsely
  • 2 teaspoons tarragon leaf
  • 2 teaspoons vinegar
  • 1 tablespoon horseradish
  • clove garlic 1 sm.
  • 2 cans fish 6 1/2 oz. each tuna, drained
  • 2 tablespoons lemon juice
  • 1 3/4 cups mayonnaise
  • 3 ounces cream cheese at room temp
  • 1/4 cup blue cheese at room temp
  • 1/4 teaspoon worcestershire sauce
  • 1/2 teaspoon curry powder or to taste
  • salt
  • freshly ground pepper to taste

Method

  • Cut onion into 4 pieces and put with parsley, tarragon, vinegar, horseradish, garlic, tuna fish and lemon juice into the food processor with steel blade.
  • Process until mixed thoroughly.
  • Spoon out into a 2 quart bowl.
  • Add remaining ingredients to processor and process until smooth.
  • Blend into tuna mixture in bowl.
  • Add more curry powder and (or) salt and pepper to taste.
  • Chill mixture overnight in refrigerator to thicken and blend flavors.
  • Serve with assorted crackers.
  • Makes 4 cups.
