Ingredients

  • 66 Nilla Vanilla Wafers
  • 2 env. unflavoured gelatine
  • 1/4 cup water
  • 1 lemon, zested and juiced
  • 1/4 cup water
  • 4 cups ripe strawberries, pureed Safeway 1 lb For $3.99 thru 02/09
  • 2 cups Cool Whip Whipped Topping

Method

  • LINE bottom and sides of 9 1/2" (24cm) flan pan with wafers.
  • Overlap side wafers slightly to form a petal pattern.
  • Reserve.
  • SPRINKLE gelatin over water and lemon juice in a saucepan.
  • Let stand 5 minutes.
  • Heat and stir over low heat until gelatin is dissolved.
  • Stir into strawberry puree and add lemon zest.
  • Chill until mixture is thickened and mounds slightly.
  • FOLD in whipped topping.
  • Pour into crust.
  • Chill 3 -4 hours or until firm.
  • Garnish with fresh strawberries, if desired.
