Ingredients
- 1 Tbsp. butter
- 4 garlic cloves, minced
- 2 (14 oz.) cans chicken broth
- 1 (9 oz.) cheese tortellini
- 1/4 c. grated Parmesan cheese
- 1 (12 1/2 oz.) can stewed tomatoes
- 1/2 bunch spinach (steamed)
- 1 tsp. basil
- salt and pepper to taste
Method
- Melt butter, add garlic and saute for 2 minutes.
- Stir in broth and tortellini.
- Bring to a boil and reduce heat.
- Mix in grated cheese, season with salt and pepper.
- Simmer until tortellini are tender, about 5 minutes.
- Stir in tomatoes, spinach and basil and simmer 2 minutes.
- Serve.
- Additional cheese may be added.
