Ingredients

  • 1 Tbsp. butter
  • 4 garlic cloves, minced
  • 2 (14 oz.) cans chicken broth
  • 1 (9 oz.) cheese tortellini
  • 1/4 c. grated Parmesan cheese
  • 1 (12 1/2 oz.) can stewed tomatoes
  • 1/2 bunch spinach (steamed)
  • 1 tsp. basil
  • salt and pepper to taste

Method

  • Melt butter, add garlic and saute for 2 minutes.
  • Stir in broth and tortellini.
  • Bring to a boil and reduce heat.
  • Mix in grated cheese, season with salt and pepper.
  • Simmer until tortellini are tender, about 5 minutes.
  • Stir in tomatoes, spinach and basil and simmer 2 minutes.
  • Serve.
  • Additional cheese may be added.
