Ingredients

  • 2 large cloves garlic, finely chopped
  • 1 tsp. oil
  • 2 onions, cut into thin half rings
  • 2 c. tomatoes, drained and chopped
  • 2 tsp. red wine vinegar
  • 2 Tbsp. chopped fresh basil
  • pinch of crushed red pepper flakes
  • pinch of black pepper

Method

  • Saute garlic in oil until lightly browned (1 to 2 minutes). Stir in onions and pepper flakes.
  • Saute for 3 minutes. Stir in tomatoes.
  • Lower heat.
  • Cover and cook 5 minutes. Uncover and cook 5 minutes longer.
  • Stir in vinegar and black pepper. Cool. Refrigerate unless using immediately. Stir in basil just before serving.
