Ingredients
- 2 large cloves garlic, finely chopped
- 1 tsp. oil
- 2 onions, cut into thin half rings
- 2 c. tomatoes, drained and chopped
- 2 tsp. red wine vinegar
- 2 Tbsp. chopped fresh basil
- pinch of crushed red pepper flakes
- pinch of black pepper
Method
- Saute garlic in oil until lightly browned (1 to 2 minutes). Stir in onions and pepper flakes.
- Saute for 3 minutes. Stir in tomatoes.
- Lower heat.
- Cover and cook 5 minutes. Uncover and cook 5 minutes longer.
- Stir in vinegar and black pepper. Cool. Refrigerate unless using immediately. Stir in basil just before serving.
