Ingredients
- 1 butternut squash
- 1 small chopped onion
- fresh parsley, chopped
- 1 can cream of chicken soup
- 1/2 pt. heavy cream
- 2 to 3 Tbsp. butter
- 1 Tbsp. sugar
Method
- Saute onion.
- Cut up squash; boil with 1 tablespoon sugar until soft.
- Add onion to chicken soup.
- Add chopped parsley and onions.
- Drain and mash squash and add to soup mixture.
- Put through blender briefly.
- Add cream and melted butter.
- Stir briefly.
- Serve immediately.
