Ingredients

  • 2 Tbsp. plain gelatin
  • 1/2 c. cold water
  • 1/2 c. vinegar
  • 2 c. tomato juice
  • 1/2 small onion, grated
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. horseradish
  • juice of 1 lemon
  • 2 Tbsp. sugar
  • 1 c. shredded cabbage
  • 2 c. chopped celery
  • 3 Tbsp. chopped green pepper
  • 3 Tbsp. chopped pimento

Method

  • Soften gelatin in cold water and vinegar.
  • Mix tomato juice, onion, salt and pepper.
  • Boil 5 minutes.
  • Add horseradish, lemon juice and sugar.
  • Add softened gelatin; stir until dissolved. Cool.
  • Add cabbage, celery, green pepper and pimento.
  • Mix well. Pour into mold.
  • Chill until firm.
