- 2 Tbsp. plain gelatin
- 1/2 c. cold water
- 1/2 c. vinegar
- 2 c. tomato juice
- 1/2 small onion, grated
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. horseradish
- juice of 1 lemon
- 2 Tbsp. sugar
- 1 c. shredded cabbage
- 2 c. chopped celery
- 3 Tbsp. chopped green pepper
- 3 Tbsp. chopped pimento
Method
- Soften gelatin in cold water and vinegar.
- Mix tomato juice, onion, salt and pepper.
- Boil 5 minutes.
- Add horseradish, lemon juice and sugar.
- Add softened gelatin; stir until dissolved. Cool.
- Add cabbage, celery, green pepper and pimento.
- Mix well. Pour into mold.
- Chill until firm.
