- 2 medium ripe avocados
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 c. sour cream
- 1/2 c. mayonnaise
- 1 pkg. taco seasoning
- 2 cans bean dip
- 1 large bunch green onions with tops, chopped finely
- 2 medium tomatoes, coarsely chopped
- 2 cans pitted ripe olives, drained and chopped
- 12 oz. pkg. sharp Cheddar cheese, shredded
- 1 pkg. tortilla chips
Method
- Peel, pit and mash avocados in a medium bowl with the lemon juice, salt and pepper.
- In a separate bowl, combine sour cream, mayonnaise and taco seasoning.
- In a large shallow platter, spread bean dip, then top with avocado mixture and sour cream mixture. Sprinkle with onions, tomatoes and olives.
- Cover with cheese. Serve at room temperature or chilled with lots of chips.
