Ingredients

  • 2 medium ripe avocados
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. sour cream
  • 1/2 c. mayonnaise
  • 1 pkg. taco seasoning
  • 2 cans bean dip
  • 1 large bunch green onions with tops, chopped finely
  • 2 medium tomatoes, coarsely chopped
  • 2 cans pitted ripe olives, drained and chopped
  • 12 oz. pkg. sharp Cheddar cheese, shredded
  • 1 pkg. tortilla chips

Method

  • Peel, pit and mash avocados in a medium bowl with the lemon juice, salt and pepper.
  • In a separate bowl, combine sour cream, mayonnaise and taco seasoning.
  • In a large shallow platter, spread bean dip, then top with avocado mixture and sour cream mixture. Sprinkle with onions, tomatoes and olives.
  • Cover with cheese. Serve at room temperature or chilled with lots of chips.
