Ingredients

  • 4 c. all-purpose flour
  • 1/4 c. sugar
  • 1 Tbsp. baking powder
  • 1 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 2/3 c. shortening
  • 1 c. buttermilk *
  • 3 large eggs
  • 1 (11 oz.) can vacuum-packed white corn, drained
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
  • 1 (4 oz.) pkg. shredded Cheddar cheese (1 c.)

Method

  • About 45 minutes before serving or early in day:
  • Preheat oven to 425°.
  • In large bowl, mix flour, sugar, baking powder, salt and baking soda.
  • With pastry blender or two knives used scissor-fashion, cut in shortening until mixture resembles coarse crumbs.
