Ingredients
- 1/4 c. butter or margarine, melted
- 1 c. mashed potato flakes
- 1 tsp. salt or to taste
- 2 to 3 lb. frying chicken, cut in pieces
Method
- Preheat oven to 400°.
- Melt butter in 9 x 13-inch pan. Combine potato flakes and salt in plastic bag.
- Rinse chicken pieces in cold water, then shake in the plastic bag.
- Place chicken, skin side down, in melted butter.
- Bake 60 minutes; turn once after 30 minutes.
