Ingredients

  • 1 medium onion, sliced
  • 1 clove garlic, minced
  • 1 tsp. dried rosemary leaves
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried thyme
  • 2 Tbsp. olive oil
  • 2 c. canned, chopped tomatoes (drain some of juice off)
  • 3/4 c. catsup
  • 1/4 c. vinegar
  • 1 chicken bouillon cube
  • pepper to taste
  • 2 to 3 lb. chicken or chicken breasts, cut into pieces with skin removed
  • spaghetti
  • Parmesan cheese

Method

  • In large skillet, saute onion, garlic and herbs in olive oil. Stir in tomatoes, catsup, vinegar, bouillon and pepper.
  • Add chicken.
  • Bring to a boil.
  • Reduce heat and simmer 45 to 60 minutes or until chicken is tender.
  • Serve over spaghetti and sprinkle with cheese.
