Ingredients

  • 1 lb. ground beef or turkey
  • 1 c. whole kernel corn
  • 1/2 c. ripe olives, sliced
  • 1 c. stewed tomatoes
  • 2 c. tomato sauce
  • 1 c. grated cheese
  • 1/2 c. onions
  • 2 Tbsp. chili powder
  • 1 Tbsp. black pepper
  • 1 Tbsp. salt
  • 1 pkg. cornbread mix, prepared as directed

Method

  • In a large skillet, brown meat and onions; add salt and pepper.
  • Add
  • tomato
  • sauce,
  • stewed tomatoes and chili powder and simmer
  • for
  • minutes.
  • Combine corn and ripe olives and simmer an additional
  • 10 minutes.
  • Prepare cornbread mix as directed. Pour
  • meat mixture
  • into
  • large casserole dish. Sprinkle
  • with Cheddar
  • cheese
  • and
  • spread cornbread mixture evenly on top. Bake until cornbread is brown.
