Ingredients

  • 1 egg
  • 1 (12 oz.) can corn
  • 1 c. shredded Cheddar cheese
  • 1 (8 oz.) pkg. corn muffin mix
  • 1 (5 1/2 oz.) pkg. smoked sausage links

Method

  • Grease an 8 x 8 x 2-inch baking dish.
  • Preheat oven to 400°. Crack an egg into a mixing bowl and beat it.
  • Add undrained corn and half the cheese to the egg.
  • Mix with a wooden spoon.
  • Add muffin mix and stir until all ingredients are wet (the batter will be thick).
  • Pour batter into greased baking dish.
  • With paper towels, pat sausage links dry.
  • Push links into batters.
  • Bake for 30 minutes.
  • Cover with remaining cheese.
  • Heat until cheese is melted.
