Ingredients
- 1 egg
- 1 (12 oz.) can corn
- 1 c. shredded Cheddar cheese
- 1 (8 oz.) pkg. corn muffin mix
- 1 (5 1/2 oz.) pkg. smoked sausage links
Method
- Grease an 8 x 8 x 2-inch baking dish.
- Preheat oven to 400°. Crack an egg into a mixing bowl and beat it.
- Add undrained corn and half the cheese to the egg.
- Mix with a wooden spoon.
- Add muffin mix and stir until all ingredients are wet (the batter will be thick).
- Pour batter into greased baking dish.
- With paper towels, pat sausage links dry.
- Push links into batters.
- Bake for 30 minutes.
- Cover with remaining cheese.
- Heat until cheese is melted.
