Ingredients

  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 2 lbs stew meat
  • 1 tablespoon ground thyme
  • salt & pepper
  • 36 ounces vegetable juice (V8)
  • 2 (15 ounce) cans tomato sauce

Method

  • In a large pot, saute onions and garlic in olive oil for 3 minutes or so over medium heat.
  • Sprinkle plenty of salt and pepper over meat and stir into the hot pot.
  • Brown thoroughly and stir in V8, tomato sauce, more salt & pepper, thyme.
  • Bring to a boil and reduce heat to simmer.
  • Cook covered 2 hours and 45 minutes or until meat is tender.
  • Taste and adjust seasonings.
  • Lots of salt, pepper depending on your taste.
  • Serve hot over mashed potatoes.
