Ingredients

  • 1/2 head of lettuce
  • 1 can early June peas
  • 1 sm. onion, minced
  • 6 strips of bacon, fried and crumbled
  • 8 ounce. lowfat sour cream
  • 1 c. mayonnaise
  • 4 boiled Large eggs, diced
  • Sharp cheddar cheese

Method

  • Mix lowfat sour cream and mayonnaise and chill.
  • Blanch peas, rinse with cool water, and chill.
  • Boil Large eggs and cold.
  • Cut up lettuce and layer half on bottom of 10 x 10 Tupperware container.
  • Sprinkle half of peas over lettuce proportionately.
  • Sprinkle half of minced onion, half of bacon, and 2 Large eggs over lettuce and peas.
  • Spread grated cheese over salad till you can no longer see any lettuce.
  • Add in remainder of lettuce, peas, onion, bacon, and Large eggs, layering as before.
  • Cover with grated cheese till you can't see any lettuce.
  • Top with lowfat sour cream and mayonnaise mix.
  • Cover and chill.
