Ingredients
- 1 ready-made pie crust
- 1 can yams
- 1 small can evaporated milk
- 1 egg, beaten
- 1 1/4 c. sugar or to taste
- pinch of salt and ginger (use only ground ginger)
- 1/4 tsp. nutmeg and cinnamon
Method
- In a large bowl, mash the yams to remove strings.
- Add egg, milk, sugar, vanilla, salt, ginger, nutmeg and cinnamon to bowl and beat until smooth.
- Prick holes in crust.
- Pour mixture into prepared crust and bake at 350° for 1 hour or until toothpick inserted in center of pie comes out clean.
- Serves 8.
