Ingredients

  • 1 ready-made pie crust
  • 1 can yams
  • 1 small can evaporated milk
  • 1 egg, beaten
  • 1 1/4 c. sugar or to taste
  • pinch of salt and ginger (use only ground ginger)
  • 1/4 tsp. nutmeg and cinnamon

Method

  • In a large bowl, mash the yams to remove strings.
  • Add egg, milk, sugar, vanilla, salt, ginger, nutmeg and cinnamon to bowl and beat until smooth.
  • Prick holes in crust.
  • Pour mixture into prepared crust and bake at 350° for 1 hour or until toothpick inserted in center of pie comes out clean.
  • Serves 8.
