Ingredients

  • 1 (9-inch) pie crust
  • 2 c. hot mashed sweet potatoes
  • 3/4 c. sugar
  • 1 Tbsp. all-purpose flour
  • 1/2 tsp. nutmeg
  • 1/2 tsp. baking powder
  • 1/4 c. butter or margarine
  • 1 egg, slightly beaten
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla extract
  • 1 1/4 c. milk or evaporated milk

Method

  • Heat oven to 425°.
  • Combine sugar, flour, baking powder and nutmeg in mixer bowl.
  • Add remaining ingredients and beat well. Pour filling in pie crust and bake 15 minutes.
  • Reduce oven temperature to 350°.
  • Bake until knife inserted in center comes out clean, about 45 minutes longer.
