Ingredients
- 3 c. flour
- 2 c. sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 c. chopped nuts
- 3 eggs
- 1 1/4 c. Crisco oil
- 1 tsp. almond extract
- 2 c. chopped ripe bananas
- 1 (No. 2) can crushed pineapple
Method
- Mix and sift flour, sugar, baking soda, salt and cinnamon. Stir in nuts.
- Beat eggs slightly.
- Combine with oil, extract, bananas and undrained pineapple.
- Add to dry ingredients; mix thoroughly, but do not beat.
- Spoon into well oiled 10-inch tube pan.
- Bake at 325° for 1 hour and 20 minutes.
- Remove from oven and let stand.
