Ingredients

  • 3 c. flour
  • 2 c. sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 c. chopped nuts
  • 3 eggs
  • 1 1/4 c. Crisco oil
  • 1 tsp. almond extract
  • 2 c. chopped ripe bananas
  • 1 (No. 2) can crushed pineapple

Method

  • Mix and sift flour, sugar, baking soda, salt and cinnamon. Stir in nuts.
  • Beat eggs slightly.
  • Combine with oil, extract, bananas and undrained pineapple.
  • Add to dry ingredients; mix thoroughly, but do not beat.
  • Spoon into well oiled 10-inch tube pan.
  • Bake at 325° for 1 hour and 20 minutes.
  • Remove from oven and let stand.
