Ingredients

  • 6 medium sweet potatoes
  • 1/2 c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/3 c. milk
  • 1/2 c. butter
  • 1/3 c. packed brown sugar
  • 1/3 c. finely chopped pecans
  • 2 Tbsp. all-purpose flour
  • 2 Tbsp. butter

Method

  • Cook sweet potatoes in boiling water for 45 minutes or until tender.
  • Let cool to touch; peel and mash.
  • Combine potatoes, sugar, eggs, vanilla, milk and 1/2 cup butter.
  • Beat at medium speed until smooth.
  • Spoon into a lightly greased 12 x 8 x 2-inch baking dish, then combine brown sugar, pecan, flour and 2 tablespoons of butter; sprinkle mixture over casserole.
  • Bake at 350° for 30 minutes.
