Ingredients
- 6 medium sweet potatoes
- 1/2 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1/3 c. milk
- 1/2 c. butter
- 1/3 c. packed brown sugar
- 1/3 c. finely chopped pecans
- 2 Tbsp. all-purpose flour
- 2 Tbsp. butter
Method
- Cook sweet potatoes in boiling water for 45 minutes or until tender.
- Let cool to touch; peel and mash.
- Combine potatoes, sugar, eggs, vanilla, milk and 1/2 cup butter.
- Beat at medium speed until smooth.
- Spoon into a lightly greased 12 x 8 x 2-inch baking dish, then combine brown sugar, pecan, flour and 2 tablespoons of butter; sprinkle mixture over casserole.
- Bake at 350° for 30 minutes.
