Ingredients
- 1 (1 lb.) can sauerkraut, drained well
- 1/2 c. chopped onion
- 1/2 c. sugar
- 1/2 c. vinegar
- 1/2 c. celery, chopped
- 1/2 c. green pepper, chopped
- 2 Tbsp. chopped pimento
- 1/2 c. oil
- salt
- pepper
Method
- Mix vegetable ingredients together in large bowl.
- Bring mixture of sugar, oil and vinegar to a boil.
- Turn heat down and simmer for 2 to 3 minutes.
- Pour over sauerkraut mixture and mix well.
- Refrigerate overnight before serving.
- Will keep in refrigerator for several weeks; flavor will improve.
- More sugar may be added to suit individual taste.
