Ingredients

  • 1 (1 lb.) can sauerkraut, drained well
  • 1/2 c. chopped onion
  • 1/2 c. sugar
  • 1/2 c. vinegar
  • 1/2 c. celery, chopped
  • 1/2 c. green pepper, chopped
  • 2 Tbsp. chopped pimento
  • 1/2 c. oil
  • salt
  • pepper

Method

  • Mix vegetable ingredients together in large bowl.
  • Bring mixture of sugar, oil and vinegar to a boil.
  • Turn heat down and simmer for 2 to 3 minutes.
  • Pour over sauerkraut mixture and mix well.
  • Refrigerate overnight before serving.
  • Will keep in refrigerator for several weeks; flavor will improve.
  • More sugar may be added to suit individual taste.
