Ingredients
- 5 large sweet potatoes, baked
- 1/3 c. brown sugar
- 4 Tbsp. peanut butter
- 12 c. peanuts, chopped
Method
- Let potatoes cool after baking; cut in half (lengthwise). Scoop out inside, saving the peelings.
- Mash potato, brown sugar and peanut butter together.
- Put back into peelings.
- Sprinkle with chopped peanuts.
- Put into oven at 450° and brown slightly.
