Ingredients
- 2 Tbsp. soft butter
- 3 potatoes, pared
- 1 1/2 tsp. salt, divided
- 1/2 c. chopped onion
- 1 1/2 c. shredded Swiss cheese
- 2 eggs
- 1 c. milk
- 2 Tbsp. chopped parsley
- 1/2 tsp. pepper
- 1/2 tsp. paprika
- 1/4 tsp. dry mustard
Method
- Spread butter over a 9-inch pie plate.
- Grate potatoes and drain well.
- Sprinkle with 1 teaspoon of salt and chopped onion; mix well.
- Press over bottom and sides of pie plate.
- Sprinkle with cheese.
