Ingredients
- 9 large ripe cucumbers
- 2 c. water
- 1 c. coarse salt
- 7 c. ice water
- 6 Tbsp. whole pickling spice in small bag
- 2 qt. cider vinegar
- 4 c. sugar
- 2 Tbsp. mustard seed
- 3 small sliced onions
- 1 tsp. dill
- bay leaf
Method
- Cut cucumbers in half and peel.
- Cut each half in quarters lengthwise.
- Remove seeds.
- Heat 2 cups water and coarse salt. Add ice water. Pour over cucumbers and chill for at least 12 hours.
