Ingredients

  • 6 slices white bread
  • 2 Tbsp. fat-free oleo
  • 1/2 c. raisins
  • 1/3 c. sugar
  • 6 egg whites and tiny bit of 1 yolk
  • 3 c. skim milk, scalded
  • 1/4 tsp. cinnamon
  • 2 Tbsp. sugar

Method

  • Toast bread that has been buttered.
  • Soak raisins in boiling water for 5 minutes, then drain.
  • Tear bread into small pieces and place in baking dish.
  • Sprinkle on the raisins.
  • Scald milk.
  • Stir in the 1/3 cup sugar.
  • Beat eggs slightly and add to warm milk. Stir until sugar is dissolved.
  • Pour milk mixture over bread and raisins and let stand about 10 minutes.
  • If toasted bread floats, push it down.
  • When the bread is well soaked, mix the 2 tablespoons of sugar and the cinnamon and sprinkle on top.
  • Bake, uncovered, for 30 minutes at 350°.
  • This may be served hot or cold.
