Ingredients
- 6 slices white bread
- 2 Tbsp. fat-free oleo
- 1/2 c. raisins
- 1/3 c. sugar
- 6 egg whites and tiny bit of 1 yolk
- 3 c. skim milk, scalded
- 1/4 tsp. cinnamon
- 2 Tbsp. sugar
Method
- Toast bread that has been buttered.
- Soak raisins in boiling water for 5 minutes, then drain.
- Tear bread into small pieces and place in baking dish.
- Sprinkle on the raisins.
- Scald milk.
- Stir in the 1/3 cup sugar.
- Beat eggs slightly and add to warm milk. Stir until sugar is dissolved.
- Pour milk mixture over bread and raisins and let stand about 10 minutes.
- If toasted bread floats, push it down.
- When the bread is well soaked, mix the 2 tablespoons of sugar and the cinnamon and sprinkle on top.
- Bake, uncovered, for 30 minutes at 350°.
- This may be served hot or cold.
