Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons white, white wine, red vinegar
  • 2 tablespoons sugar
  • 2 teaspoons ground ginger
  • 2 cloves garlic finely chopped
  • 2 pounds boneless, skinless chicken breast halves
  • peanut sauce

Method

  • For marinade, blend all ingredients except chicken and Peanut Sauce.
  • Pour marinade over chicken in large, shallow nonaluminum baking dish or plastic bag; turn to coat. Cover, or close bag, and marinate in refrigerator, turning occasionally, 3 hours.
  • Remove chicken from marinade, discarding marinade. Thread chicken on skewers. Grill or broil chicken, turning occasionally, 6 minutes or until chicken is thoroughly cooked.
