Ingredients
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons white, white wine, red vinegar
- 2 tablespoons sugar
- 2 teaspoons ground ginger
- 2 cloves garlic finely chopped
- 2 pounds boneless, skinless chicken breast halves
- peanut sauce
Method
- For marinade, blend all ingredients except chicken and Peanut Sauce.
- Pour marinade over chicken in large, shallow nonaluminum baking dish or plastic bag; turn to coat. Cover, or close bag, and marinate in refrigerator, turning occasionally, 3 hours.
- Remove chicken from marinade, discarding marinade. Thread chicken on skewers. Grill or broil chicken, turning occasionally, 6 minutes or until chicken is thoroughly cooked.
