Ingredients

  • 2 c. flour
  • 2 c. granulated sugar
  • 2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 c. oil
  • 4 eggs
  • 1 tsp. vanilla
  • 3 c. finely chopped, peeled, tart apples (about 3)
  • 2 c. finely chopped walnuts
  • fine dry bread crumbs (optional)
  • confectioners sugar (optional)

Method

  • In large bowl of mixer, combine flour, granulated sugar, soda, cinnamon, oil, eggs and vanilla; beat at medium speed until well mixed.
  • Stir in apples and walnuts.
  • Turn into well-greased 12-cup fluted tube pan heavily coated with bread crumbs.
  • Bake in preheated 350° oven for 60 to 65 minutes or until pick inserted in cake comes out clean.
  • Cool in pan 10 minutes, then turn out on rack to cool.
  • Sprinkle with confectioners sugar.
  • Makes 18 to 20 servings.
