Ingredients
- 2 c. flour
- 2 c. granulated sugar
- 2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 c. oil
- 4 eggs
- 1 tsp. vanilla
- 3 c. finely chopped, peeled, tart apples (about 3)
- 2 c. finely chopped walnuts
- fine dry bread crumbs (optional)
- confectioners sugar (optional)
Method
- In large bowl of mixer, combine flour, granulated sugar, soda, cinnamon, oil, eggs and vanilla; beat at medium speed until well mixed.
- Stir in apples and walnuts.
- Turn into well-greased 12-cup fluted tube pan heavily coated with bread crumbs.
- Bake in preheated 350° oven for 60 to 65 minutes or until pick inserted in cake comes out clean.
- Cool in pan 10 minutes, then turn out on rack to cool.
- Sprinkle with confectioners sugar.
- Makes 18 to 20 servings.
