Ingredients
- 2 1/2 gal. chopped onion
- 8 Tbsp. chopped red pepper
- 2 qt. vinegar
- 2 tsp. turmeric
- 8 Tbsp. pickling spice
- 9 c. sugar
- 1 c. salt
Method
- Mix onion and pepper, sprinkle with salt and let stand 30 minutes.
- Squeeze out juice by twisting in cheesecloth bag.
- Tie spices in cheesecloth bag.
- Combine all ingredients.
- Bring to a boil over medium heat and cook until thick, stirring often.
- Put in jars and seal.
- Process 10 minutes in boiling water bath. Serve with pork or even good on a hot dog.
