Ingredients

  • 2 1/2 gal. chopped onion
  • 8 Tbsp. chopped red pepper
  • 2 qt. vinegar
  • 2 tsp. turmeric
  • 8 Tbsp. pickling spice
  • 9 c. sugar
  • 1 c. salt

Method

  • Mix onion and pepper, sprinkle with salt and let stand 30 minutes.
  • Squeeze out juice by twisting in cheesecloth bag.
  • Tie spices in cheesecloth bag.
  • Combine all ingredients.
  • Bring to a boil over medium heat and cook until thick, stirring often.
  • Put in jars and seal.
  • Process 10 minutes in boiling water bath. Serve with pork or even good on a hot dog.
