Ingredients

  • 1 sm. box Velveeta cheese
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can Rotel's tomatoes and green chiles
  • 6-8 corn tortillas
  • 3-4 chicken breasts
  • 1 teaspoon chili pwdr
  • 1 tbsp. chicken broth
  • Spices to your taste
  • 1 bay leaf (optional)

Method

  • Boil chicken.
  • Mix cream of chicken soup, mushroom soup and Rotel's tomatoes and chiles to create sauce.
  • Line greased casserole with strips of tortillas, sprinkle broth and layer with sauce, chicken and cheese, etc.
  • Bake at 350 degrees for 20 to 30 min.
