Ingredients

  • 2 Tbsp. lemon juice
  • 2 tsp. olive oil
  • 2 cloves garlic, minced
  • 1 chicken, cut into serving pieces
  • 1/4 tsp. black pepper
  • 8 medium size dried apricots
  • 3/4 c. orange juice
  • 1 tsp. brown sugar
  • 1 Tbsp. cider vinegar
  • 1/4 tsp. ground ginger
  • 1 tsp. spicy brown mustard

Method

  • Preheat oven to 425°.
  • Combine lemon juice, olive oil and half the garlic.
  • Rub chicken in this mixture.
  • Sprinkle with pepper. Arrange chicken in single layer in shallow pan.
  • Roast, uncovered, for 30 minutes.
