- 2 Tbsp. lemon juice
- 2 tsp. olive oil
- 2 cloves garlic, minced
- 1 chicken, cut into serving pieces
- 1/4 tsp. black pepper
- 8 medium size dried apricots
- 3/4 c. orange juice
- 1 tsp. brown sugar
- 1 Tbsp. cider vinegar
- 1/4 tsp. ground ginger
- 1 tsp. spicy brown mustard
Method
- Preheat oven to 425°.
- Combine lemon juice, olive oil and half the garlic.
- Rub chicken in this mixture.
- Sprinkle with pepper. Arrange chicken in single layer in shallow pan.
- Roast, uncovered, for 30 minutes.
