Ingredients

  • 1/2 pounds Whole Wheat Farfalle Pasta
  • 1 Tablespoon Olive Oil
  • 2 cloves Garlic, Minced
  • 1 bag (6 Oz. Size) Baby Spinach
  • 1/2 cups Sun-Dried Tomatoes, Chopped
  • 8 ounces, weight Brie Cheese, Rind Removed And Cut Into Small Cubes
  • 2 Tablespoons Half-and-half
  • 1 Tablespoon Crushed Red Pepper
  • Salt And Pepper
  • Grated Parmesan Cheese, For Garnish (optional)

Method

  • Cook pasta according to package directions.
  • Meanwhile, heat a large stove top pan over medium high heat.
  • Add olive oil and garlic and cook for about 1 minute.
  • Add spinach and saute over medium low to medium heat until it cooks down, stirring occasionally.
  • Add sun-dried tomatoes, cooked pasta, cheese, half-and-half and crushed red pepper.
  • Stir together until cheese melts.
  • Season with salt and pepper.
  • Serve with parmesan cheese if desired.
