Ingredients

  • 3 cu. cubed chicken breasts
  • 1/2 c. grape halves
  • 1/4 c. minced scallions
  • 1.4 c. snipped fresh parsley
  • 2 Tbsp. chopped pecans
  • 1/2 c. nonfat plain yogurt
  • 2 Tbsp. fat-free mayonnaise
  • 1 1/2 tsp. curry powder
  • 6 whole wheat Kaiser rolls
  • 2 nectarines, peeled, seeded and thinly sliced

Method

  • In a large bowl, combine chicken, grapes, scallions, parsely adn pecans.
  • In a cup, combine the yogurt, mayonnaise and curry. Mix the dressing with the chicken.
  • Divide the chicken among the rolls.
  • Place a nectarine slice in each sandwich.
  • Serves 6.
